I suggest going to good...That will be a challenge! I suggest going to good Italian stores and restaurants in your city or neighbourhood and starting to ask around. What words will you need to know? Should you write something down so every waiter or chef can be shown? Is there a website of restaurants in the area(s) you will visit which specialise in meeting your dietary needs? I am sure there are answers to the questions you need to ask so your diet requirements can be met, but they will be a challenge. Generally, though, if you are careful with antipasto plates and secondi (what in north america are mistakenly called entrees) you can avoid most of the glutenous items. (Most Italian dinners have 4 courses, perhaps more ... an antipasto, a primo, a secondo and a dolce. The primo is the pasta course.) If you enjoy seafood dishes of every type, you are coming to the right country. Land-based meats, while widely used are not as plentiful or varied, in my limited experience here.<br /><br />Italy, however, grows a lot of rice. Two major kinds come to mind ... carnaroli and arborio (there are others) ... and they are delicious! You could become a connoisseur of risotto in every form and manner, from the saffron types down to the most basic, if you can eat rice but must avoid wheat.
